This is a Dyer family veggie favourite that takes about 30 mins to prep and cook! Easy for a late back home from the school run or swimming sessions.

Ingredients
2 red onions (cut into wedges (only 1 if your kids are fussy like mine)
3 peppers, sliced lengthways into strips
1 TBSP of Olive Oil
2 TBSP of fajita seasoning (straight from the pot)
2 Blocks of halloumi cut into 2cm chunks
2 x Packs of Microwave Basmati rice (i find basmati has a nicer texture in this dish.
To serve:
1 x Avocado thinly sliced or cubed
Sour cream
Directions
Preheat your oven to about 200.
Put the onions and peppers into a baking tray with the oil and seasoning and give a good toss till everything is covered.
Bake for 20 mins
Cut the halloumi and drizzle with a bit of oil and a sprinkle of seasoning in a bowl and toss to coat.
Sprinkle over the packets of rice. I like to keep some clumps so the dish has different textures and looks more interesting.
Pour the halloumi evenly over the rice
bake for a further 10-15 mins till the halloumi starts to turns golden
Sprinkle over the avocado, and serve Sour Cream in a bowl.
